Chilled Cream of Tomato Soup

This is a fantastic summer soup! You can easily spice it up with additional herbs or a little garlic, if you like.
5 cups ripe fresh tomatoes, chopped coursely
2 cups cream
2 tablespoons fresh parsley, chopped fine
1 tablespoon fresh basil, chopped fine
1/2 a shallot or 2 tablespoons fresh chives, minced fine
1/2 teaspoon dry ginger
1/4 teaspoon ground allspice
1/4 teaspooon white pepper (optional)
salt and black pepper to taste
lemon slices and additional parsley for garnish (optional)

1. Add tomatoes, ginger, allspice, salt and pepper to a blender or food processor. Pulse until tomatoes are coarsely pureed, but not liquefied.

2. Add cream and herbs and pulse only long enough to blend thoroughly.

3. Transfer soup to a large bowl, cover, and refrigerate for about an hour before serving. garnish with thinly sliced lemon and fresh parsley leaves.

serving notes - drink cold, acidic wines tend to lose their structure if allowed to get too warm.

• Sauvignon Blanc is a so called aromatic grape. the smell should be obvious and very clean.

• One of the qualities of this grape is a distinct grassiness.

• Robert Mondavi saw that his Sauvignon Blancs were not selling well, so he began to oak them and calling byt he name Fume Blanc.
