• We humans love to rank things. There's the alpha dog, the pecking order, there are even noble grapes. But on that list Dolcetto is nowhere to be found.
• Dolcetto shares its home, the Piedmont region of Italy, with the mighty Nebbiolo grape. So the poor Dolcetto is relegated to the less than ideal spots.
• But Dolcetto's misfortune is our good luck. Dolcetto wines tend to be good values and when paired with the right dish, magnifico!
• In a meal laid out in courses, you will probably find Dolcetto paired with the appetizer, and in Italy that is often carpaccio.
• If you ask the present owner of Harry's Bar in Venice, he will say that Carpaccio was invented right there in 1950. The dish was named by Giuseppe Cipriani, the bar's owner at the time, who said the colors of the meat reminded him of the paintings of Venetian artist Vittore Carpaccio.
